How to Make Sweet Potato Fries with Yogurt Nutbutter Dip

Recipe: Roasted Sweet Potato Fries with Yogurt Nutbutter Dip

SWEET POTATO FRY INGREDIENTS
2 teaspoons kosher salt
1 teaspoon coriander
1 teaspoon Cajun seasoning
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 tablespoon coconut sugar

2 large sweet potatoes, cut into fries
1 tablespoon avocado oil
1/2 small red onion, sliced
1/4 cup cilantro leaves (for garnish)

YOGURT NUTBUTTER DIP INGREDIENTS
1/4 cup Greek yogurt
2 tablespoons Nutista “Nut Job” nutbutter
Zest of 1 lime
Juice of 1/2 lime
1 tablespoon honey
1/4 teaspoon salt
2 tablespoons water

DIRECTIONS
Preheat oven to 425 F.
In a small bowl, mix all spices and salt together. Set aside. Cut sweet potatoes into fries and place on large baking sheet. Drizzle with 1 tablespoon avocado oil and sprinkle on spice mixture. Toss with your hands to evenly distribute the spice mixture and oil.

Spread sweet potatoes in a single layer on sheet tray and bake for 10 minutes. Remove from oven and sprinkle red onion on tray. Bake for another 15-20 minutes or until potatoes are cooked through and crispy.

For dipping sauce: combine all ingredients in a small bowl and whisk together. Serve alongside or on top of the sweet potatoes. Garnish with cilantro and lime wedges.
