How to Make Cold Sesame Noodles

🍲 Cold Sesame Noodle Recipe 🍲⠀⠀

1 package Asian egg noodles(dried) or spaghetti ⠀⠀
1 red bell pepper, sliced into strips ⠀⠀
1 package shelled edamame(about 8 ounces) ⠀⠀
1 cup shredded carrots ⠀⠀
1 cup snap peas, cleaned and sliced ⠀⠀
1 cup snow peas, cleaned and sliced ⠀⠀
6 scallions, sliced on a bias ⠀⠀

2 cloves garlic, microplaned ⠀⠀
1 T grated ginger ⠀⠀
1/2 cup Nutista / Stone Tangerine Express IPA nutbutter⠀⠀
3/4 cup @traderjoes Soyaki⠀⠀
1 tablespoon sesame oil⠀⠀
1 tablespoon soy sauce ⠀⠀
1 teaspoon sriracha ⠀⠀
1/4 cup Thai chili sauce ⠀⠀
Juice of 1/2 lime ⠀⠀
1 tablespoon sesame seeds⠀⠀
1/4 cup roasted and salted peanuts, chopped ⠀⠀

In a small bowl whisk all sauce ingredients together and set aside. In a large bowl toss all veggies together. Cool noodles according to package directions. Drain and rinse with cold water. Add noodles to large bowl with veggies. Pour dressing on top and toss to combine. Enjoy!
